Back by popular demand, this one-off class examines the hotly debated subject of umami. Despite current controversy, umami does exist. Train your palate to detect the experience and learn how to apply this discovery to enhance the dishes you cook. This taste-experience is found in everything except dessert…and maybe we can even find an exception. Participate in an exciting session of taste-tests designed to challenge and educate the frontiers of your knowledge and palate. We promise such dishes as Caesar salad with Parmesan crackers, Australian toast, chicken scallopini with shiitake dust, and blue cheese tarts with port wine jelly, accompanied by saké, fortified wines such as plum wine and sherry, and red wine.

This class examining the most elusive of the five tastes will be prefaced by a brief examination of the physiological process that governs your taste experiences. There will be emphasis on training your palate to detect flavors, blindfold taste tests, and the application of these flavor elements as a basis to good cooking.
