Cathy Kaufman
Cathy Kaufman is a professional chef, culinary historian, and cooking teacher at the Institute of Culinary Education in New York City. She is the author of Cooking in Ancient Civilizations (2006) and was a Senior Editor of the Oxford Encyclopedia of Food and Drink in America (2004). Her work has appeared in Gastronomica, the Oxford Symposium on Food and Cookery proceedings and other publications. She has consulted on historical dining to museums and cultural institutions and is currently at work on a social and material culture history of the dining room.
Kaufman been the chairperson of the Culinary Historians of New York since 2003, and is on the boards of The Culinary Trust, the philanthropic partner of the IACP, and the American Friends of the Oxford Symposium. She was elected to Les Dames d’Escoffier in 2005. She received her culinary training at Peter Kump’s New York Cooking School and Madeleine Kamman’s School for American Chefs.
