Underground Food Collective is exactly that, a Collective. Founded by Jonny and Ben Hunter, UFC has no head chef or owner. Rather, UFC works together, drawing on experiences and training to produce food that's better than any one of them could do alone. UFC members have a combination of classical training and practical experience. They have worked in some of the finest restaurants around the country and they have lived, traveled, and eaten around the world. They’ve stood over a stove at the Madison winter farmers market making breakfast for 350 people in two and a half hours and they’ve slaughtered, butchered, and harvested alongside their farmer partners. This is more than just recipes; it's about how food is experienced and enjoyed. UFC has a community of partners, farmers, children, and friends who support and help them. On most nights of the week this community cooks alongside them. UFC is proud to say that they couldn't do what they do without this community support.
